Aceasta reteta de oua shakshuka cu spanac, praz si feta presarata deasupra, este ideala pentru un mic dejun, pranz sau o cina plina de arome si vitamine, si mai ales – se prepara destul de repede 🙂 .
Ingrediente: (Pentru 2 portii generoase)
- 4 oua
- 150 g spanac proaspat (puteti folosi si congelat)
- 400 g praz
- 1 ardei kapia
- o salota mare (sau orice alta ceapa aveti)
- 600 g rosii cuburi cu sos (de la conserva)
- zeama de la jumatate de lamaie
- 1-2 avocado pentru servire
- cateva fire de menta proaspata
- 200 g branza feta
- amestec condimente din: o lingurita cu varf de chimion macinat, o lingurita cu varf de boia dulce, o lingurita cu varf de boia iute, o lingurita cu varf de praf de usturoi, o lingurita cu varf de praf de ceapa, sare si piper dupa gust.

Preparare:
Legumele se spala, se curata si se taie dupa cum urmeaza: prazul felii egale, ceapa in 4 pe lung si apoi felii egale, ardeiul in 4 fasii pe lung si apoi felii egale, menta se toaca marunt, avocado se curata de coaja si se taie felii egale.

Intr-un wok sau tigaie inalta, adaugam putin ulei de masline, cat sa acoperim fundul. Cand acesta s-a incins, adaugam ceapa taiata si o calim cateva minte pana cand incepe sa se inmoaie. Adaugam apoi ardeiul, amestecam bine si mai gatim cam 3-4 minute dupa care adaugam prazul, amestecam bine si lasam sa se gateasca impreuna cam 4-5 minute, amestecand periodic.

Cand prazul incepe sa se inmoaie, adaugam rosiile din conserva si condimentele, amestecam bine si lasam se gateasca la foc mediu, cu capacul pus, in jur de 7-8 minute amestecand periodic. Adaugam apoi spanacul si amestecam bine, adaugam zeama de la jumatate de lamaie, punem capacul la loc si mai lasam sa se gateasca ~2 minute la foc mediu. Facem putin loc cu lingura in 4 zone in tigaie si adaugam apoi ouale in causurile formate. Punem capacul inapoi si lasam sa se gateasca inca 3-4 minute sau pana cand ouale sunt facute, fara sa mai amestecam.

Oprim focul si presaram deasupra piper, feta maruntita cu mana si menta tocata. Servim cu felii de avocado.

Ingredients: (For 2 generous servings)
- 4 eggs
- 150 g fresh spinach (you can also use frozen)
- 400 g leeks
- 1 pepper
- a large shallot (or any type of onion you have)
- 600 g diced tomatoes with sauce (canned)
- juice from half a lemon
- 1-2 avocados for serving
- a few sprigs of fresh mint
- 200 g feta cheese
- spice mix: a teaspoonful of ground cumin, a teaspoonful of sweet paprika, a teaspoonful of hot pepper, a teaspoonful of garlic powder, a teaspoonful of onion powder, salt and pepper
- a little olive oil
Preparation:
Wash, clean and cut the vegetables as follows: leek into equal slices, onion into 4 lengthwise and then into equal slices, pepper into 4 lengthwise strips and then into equal slices, finely chop the mint, peel the avocado and cut equal slices.
In a wok or pan, add a little olive oil, enough to cover the bottom. When it has heated up, add the chopped onion and saute it for a few minutes until it starts to soften. Then add the pepper, mix well, and cook for about 3-4 minutes, then add the leek, mix well, and let it cook together for about 4-5 minutes, stirring periodically.
When the leek starts to soften, add the canned tomatoes and spices, mix well, and let it cook on medium heat, with the lid on, for around 7-8 minutes, stirring periodically. Then add the spinach and mix well, add the juice of half a lemon, put the lid back on, and let it cook for ~2 minutes on medium heat. Make 4 little holes using the spoon in 4 areas in the pan and then add the eggs in those holes. Put the lid back and let it cook for another 3-4 minutes or until the eggs are done, without stirring.
Turn off the heat and sprinkle pepper, crumbled feta, and chopped mint on top. Serve with avocado slices.
