Ardei umpluti cu quinoa si mazare – Stuffed peppers with quinoa and peas / Vegetarian

Un deliciu vegetarian: ardei umpluti cu quinoa, mazare si branza, gatiti in cuptor, plini de arome intense si texturi fine.

Ingrediente: (pentru 3 portii)

  • 6 ardei grasi
  • 200 g quinoa
  • 400 g mazare (de la conserva)
  • 6-7 catei de usturoi
  • 2 cepe medii
  • 2 morcovi medii
  • 250 grame branza tip cascaval (eu am avut Gouda-puteti folosi orice similar)
  • amestec condimente din o lingurita boia dulce, o lingurita chimion macinat (a nu se confunda cu chimenul), o lingurita curry si o lingurita ierburi italienesti
  • sare si piper dupa gust
  • 40 ml ulei de floarea soarelui

Preparare:

Quinoa se fierbe conform instructiunilor. Cand e gata se pune intr-o sita si se scurge bine.

Ceapa se taie marunt. Mazarea se scoate din conserva, se clateste sub jet de apa si se scurge bine. Usturoiul se curata si se taie feliute. Morcovul se curata si se da pe razatoare. Branza se da si ea pe razatoare.

Intr-o tigaie incapatoare, punem uleiul la incins. Adaugam usturoiul si ceapa si calim 1-2 minute, pana cand ceapa incepe sa se inmoaie. Adaugam apoi morcovul si condimentele, amestecam bine si gatim cam 4-5 minute, amestecand din cand in cand. Adaugam apoi mazarea, amestecam si mai gatim 2-3 minute.

Adaugam apoi quinoa fiarta si scursa bine, amestecam bine, potrivim de sare si piper si mai gatim cam 1-2 minute. Oprim focul. Adaugam 2/3 din branza si amestecam energic pana cand am incorporat branza bine in compozitie. Pornim cuptorul si il lasam sa se incinga la 190 de grade celsius.

Ardeii se spala, se taie „capacelele” si se curata de seminte. Cu ajutorul unei linguri punem compozitie in ardei si ii umplem. Ii transferam intr-o tava. Daca nu stau drepti, taiati un pic fundul, dar aveti grija sa nu taiati prea mult. Presaram deasupra in mod egal restul de branza ramas si punem „capacelele” la loc.

Dam la cuptorul preincalzit pentru 30-35 de minute, sau pana cand ardeii sunt frumos rumeniti.

Servim cu iaurt, smantana, sos de iaurt si usturoi sau simpli. Sunt deliciosi se se fac super rapid si simplu.

A vegetarian delight: peppers stuffed with quinoa, peas and cheese, baked in the oven, full of intense flavors and fine textures.

Ingredients: (for 3 servings)

  • 6 bell peppers
  • 200 g quinoa
  • 350 g peas (canned)
  • 6-7 cloves of garlic
  • 2 medium onions
  • 2 medium carrots
  • 250 grams of cheese (I had Gouda – you can use anything similar)
  • spices mix: 1 teaspoon of sweet paprika, 1 teaspoon of ground cumin, 1 teaspoon of curry and 1 teaspoon of Italian herbs
  • salt and pepper to taste
  • 40 ml sunflower oil

Preparation:

Cook the quinoa according to the instructions. When it’s ready, put it in a sieve and drain well.

Chop the onion finely. Take the peas out of the can, rinse under running water and drain well. Peel the garlic and cut into slices. Peel the carrots and grate them. Grate the cheese.

Heat the oil in a large pan. Add the garlic and onion and saute for 1-2 minutes, until the onion starts to soften. Then add the carrots and spices, mix well and cook for 4-5 minutes, stirring from time to time. Add the peas, mix and cook for another 2-3 minutes.

Add the boiled and drained quinoa, mix well, season with salt and pepper and cook for another 1-2 minutes. Turn off the heat. Add 2/3 of the cheese and mix vigorously until the cheese is well incorporated into the mixture. Turn on the oven and let it heat up to 190 degrees celsius.

Wash the peppers, cut off the caps and remove the seeds. Using a spoon, fill the peppers with the quinoa mix you cooked earlier. Transfer them to a tray. If they don’t stand straight, cut a little off the bottom, but be careful not to cut too much. Sprinkle the rest of the remaining cheese evenly on top of each pepper and put the „lids” back on.

Put them in the preheated oven for 30-35 minutes, or until the peppers are nicely browned.

Serve them with yoghurt, sour cream, yoghurt&garlic sauce, or simple. They are delicious, they are super quick and easy to prepare.
