Curry vegan, rapid de preparat si plin de aroma. Eu l-am alaturat unor noodelsi din orez, dar puteti sa il serviti si cu orez in loc de noodelsti.
De notat ca pentru a face acest curry puteti folosi si alte legume in loc de ardei grasi, ciuperci si conopida. De exemplu: brocolli, dovlecei, cartofi normali sau dulci, mazare, fasole verde etc, orice va place voua in mod deosebit. ☺️
Ingrediente: (pentru 4 portii)
- 800 ml lapte de cocos
- 2 ardei grasi
- 4 catei de usturoi
- o lingura curcuma, o lingura curry, o lingura boia dulce si o lingura chimion macinat plus o lingurita de boabe de coriandru
- o ceapa mare
- coriandru verde
- o conopida mica
- 450 g ciuperci
- taitei de orez sau orez basmati
- 30 ml ulei de masline
- sare si piper

Preparare:
Curatam usturoiul si il zdrobim prin presa de usturoi. Conopida se spala si se taie bucati medii. Ceapa se taie marunt. Ciupercile se taie in 4 sau in 2 in functie de marimea lor. Ardeii se curata de seminte si se taie in sferturi si sferturile in felii.

Intr-o oala, punem uleiul la incins si adaugam ceapa si usturoiul. Le calim pentru 1-2 minute pana cand ceapa devine moale. Adaugam condimentele si amestecam bine. Gatim cam 1 minut, dupa care adaugam laptele de cocos, amestecam bine si lasam sa dea intr-un clocot.

Cand laptele de cocos a inceput sa fiarba, adaugam legumele, amestecam bine si punem capacul. Lasam sa se gateasca cu capacul pus, pentru ~20-25 de minute sau pana cand legumele s-au inmuiat. Mai potrivim de sare sau piper daca e cazul.

Intre timp, fierbem conform instructiunilor taiteii de orez sau orezul, in functie de ce am ales.
Cand este gata, adaugam taitei de orez sau orez in bol, apoi cu un polonic adaugam deasupra curry din abundenta. Presaram coriandru proaspat tocat si servim.

Vegan curry, easy to prepare and full of flavour. I served it with some rice noodles, but you can also serve it with rice instead of noodles.
Please keep in mind that you can prepare this curry by also using other vegetables instead of bell peppers, mushrooms and cauliflower. For example, broccoli, zucchini, normal or sweet potatoes, peas, string beans etc., whatever you like. ☺️
Ingredients: (for 4 servings)
- 800 ml coconut milk
- 2 bell peppers
- 4 cloves of garlic
- 1 spoon of turmeric, 1 spoon of curry, 1 spoon of paprika and 1 spoon of ground cumin plus 1 teaspoon of coriander seeds
- 1 large onion
- fresh coriander
- 1 small cauliflower
- 450 g mushrooms
- rice noodles or basmati rice to serve
- 30 ml of olive oil
- salt and pepper
Preparation:
Peel off the garlic and crush it through the garlic press. Wash the cauliflower and cut it into medium pieces. Chop the onion finely. Cut the mushrooms into 4 or 2 pieces depending on their size. Take off the seeds from the peppers, and cut them into quarters and the quarters into slices.
In a pot, heat the oil and add the onion and garlic. Saute them for 1-2 minutes until the onion becomes soft. Add the spices and mix well. Cook for about 1 minute, then add the coconut milk, mix well and let it come to a boil.
In the meantime, cook the rice noodles or the rice according to the instructions, depending on what you have chosen.
When it’s ready, add rice noodles or rice to the bowl, then with a ladle add plenty of curry on top. Sprinkle freshly chopped coriander and serve.
