Piure de cartofi dulci cu chorizo si rosii uscate la soare – Mashed sweet potatoes with chorizo and sun-dried tomatoes

O mancare care se face foarte repede si usor. Este mai buna a2a zi dupa ce aromele s-au impletit intre ele, dar este delicioasa si imediat ce ati facut-o.

Ingrediente: (pentru 6 portii)

  • 1 kg cartofi dulci
  • 3 cepe medii
  • 3-4 morcovi
  • 60 g unt
  • 70 ml lapte
  • un chorizo (~200 g)
  • un borcan rosii uscate (~180 g produs finit)
  • 15 ml ulei de floarea soarelui
  • patrunjel proaspat
  • sare si piper

Preparare:

Cartofii se curata si se taie cuburi. Ceapa se curata si de taie felii. Morcovii se curata si se taie dupa cum doriti, felii sau fasii.

Se pun impreuna intr-o oala, se acopera cu apa si se dau la fiert.

Cat se fierb legumele, se scurg rosiile de ulei si se taie fasii. Chorizo si taie felii si apoi fiecare felie in sferturi.

Intr-o tigaie, se pune uleiul si cand acesta s-a incins, rumenim bucatelele de chorizo.

Cand sunt gata, le scoatem cu o paleta cu gauri, le scurgem bine si le punem intr-un bol. Uleiul ramas de la chorizo, il turnam fierbinte peste rosiile taiate si amestecam bine.

Cand s-au fiert legumele, le scurgem bine de apa, adaugam untul, laptele, sare si piper si zdrobim totul pana cand obtinem consistenta dorita.

Transferam totul intr-o tava si punem deasupra chorizo rumenit, rosiile uscate si presaram patrunjelul proaspat tocat.

A dish that you can prepare very quickly and easily. It’s best the 2nd day, after the flavours have blended, but it’s also delicious if you serve it immediately.

Ingredients: (for 6 servings)

  • 1 kg of sweet potatoes
  • 3 medium onions
  • 3-4 carrots
  • 60 g of butter
  • 70 ml of milk
  • 1 chorizo (~200 g)
  • 1 jar of dried tomatoes (~180 g tomatoes)
  • 15 ml sunflower oil
  • fresh parsley
  • salt and pepper

Preparation:

Peel the potatoes and cut them into cubes. Peel and slice the onion. Peel and cut the carrots as you wish, slices or strips.

Put them all together in a pot, cover them with water and boil.

While the vegetables are boiling, drain the oil from the tomatoes and cut them into strips. Cut the chorizo into slices and then each slice into quarters.

Put the oil in a pan and when it is hot, brown the chorizo. When it is ready, remove the browned pieces with a slotted spoon, drain them well and put them in a bowl. Pour the remaining chorizo oil from the pan over the chopped tomatoes whit it is still hot, and mix well.

When the vegetables are boiled, drain the water well, add butter, milk, salt and pepper and mash everything until you get the desired consistency.

Transfer everything to a tray and put the browned chorizo, and the dried tomatoes and sprinkle fresh chopped parsley on top.
