Blat umed, plin de savoare, cu nuci din plin si arome care se impletesc perfect, completat de o crema de branza delicioasa. Ce ti-ai putea dori mai mult de la un desert?
Varianta aceasta de carrot cake este usor de facut si rezultatul este unul delicios, garantat.
Cel mai bun este a2a zi, dar puteti sa il serviti si la cateva ore dupa ce l-ati asamblat.
Ingrediente: (pentru o tava de 28 cm diametru/ ~12 portii)
Pentru blat:
- 340 g faina
- 340 g zahar brun
- 190 ml ulei floarea soarelui
- 100 g nuci (eu am avut mix de nuci pecan cu nuci normale)
- 15 g praf de copt
- esenta de vanilie
- amestec condimente: o lingurita scortioara macinata, o lingurita cuisoare macinate, o lingurita cardamon macinat si o lingurita nucsoara macinata
- 4 oua
- 360 g morcovi rasi
- un varf de sare fina
- 100 ml lapte
Pentru crema:
- 500 g mascarpone
- 300 g zahar pudra
- esenta vanilie
- 190 g unt la temperatura camerei, taiat cubulete

Preparare:
Tocam nucile grosier, cu ajutorul unui cutit.
Intr-un bol amestecam faina, praful de copt, sarea, condimentele si nucile. Lasam deoparte.
Dam morcovii pe razatoarea mare, ii stoarcem bine de zeama extra si ii punem int-un bol. Lasam deoparte.
Cu ajutorul mixerului electric, mixam intr-un bol pentru aproximativ 5 minute, zaharul pentru aluat impreuna cu uleiul. Adaugam esenta de vanilie si mixam putin. Adaugam ouale, unul cate unul pe rand si mixam in continuare dupa ce fiecare ou este adaugat. Adaugam apoi amestecul ingredientelor uscate pregatit mai devreme si mixam pana la incorporare.

Adaugam apoi laptele si mixam bine. Adaugam morcovii si amestecam bine cu ajutorul unei spatule.

Pregatim cu hartie de copt o tava cu fundul detasabil. Turnam aluatul in tava si dam tava la copt in cuptorul preincalzit la 180 de grade celsius. Coacem pentru 30-40 de minute sau pana cand trece testul scobitorii.

Cat timp se coace blatul, pregatim crema de branza. Mixam untul cu zaharul pudra pana cand obtinem o crema fina. Adaugam apoi esenta de vanilie, mixam din nou si apoi adaugam treptat branza, mixand continuu pana cand am incorporat-o pe toata si am obtinut o crema fina. O punem la frigider.

Cand s-a copt blatul il scoatem si il lasam sa se raceasca complet.
Dupa ce s-a racit, il taiem in doua felii egale.
Scoatem crema din frigider si mixam din nou cam 1 minut.
Adaugam crema peste una din feliile de blat. Punem cealalta felie deasupra si punem restul de crema pe lateral si deasupra.

Dam la frigider pentru cateva ore si apoi servim.
Este chiar mai bun a2a zi. 😀

This version of carrot cake is easy to prepare and the result is delicious. Guaranteed. ☺️
It’s tastier the second day, but it can also be served in a few hours after assembling it.
Ingredients: (for a 28 cm diameter pan/~12 servings)
For the dough:
- 340 g flour
- 340 g brown sugar
- 190 ml sunflower oil
- 100 g walnuts (I had a mix of pecans and walnuts)
- 15 g baking powder
- vanilla essence
- spices mix: a teaspoon of ground cinnamon, a teaspoon of ground cloves, a teaspoon of ground cardamom and a teaspoon of ground nutmeg
- 4 eggs
- 360 g grated carrots
- a pinch of fine salt
- 100 ml of milk
For the cream:
- 500 g mascarpone
- 300 g powdered sugar
- vanilla essence
- 190 g butter at room temperature, cut into cubes
Preparation:
Using a knife chop the walnuts coarsely.
In a bowl, mix the flour, baking powder, salt, spices and nuts. Leave it aside.
Grate the carrots, squeeze the extra juice well and put them in a bowl. Leave it aside.
In another bowl, using an electric mixer, mix the sugar for the dough together with the oil for about 5 minutes. Add the vanilla essence and mix a little more. Add the eggs one by one and continue mixing after each egg is added. Add the mixture of dry ingredients that you prepared earlier and mix until incorporated.
Add the milk and mix well. Add the carrots and incorporate them using a spatula.
Prepare with baking paper a tray with removable bottom. Preheat the oven to 180 degrees Celsius. Pour the dough into the pan and bake it for about 30-40 minutes or until it passes the toothpick test.
While the dough is baking, prepare the cream. Mix the butter with the powdered sugar until you get a fine cream. Add the vanilla essence, mix again and then gradually add the cheese, mixing continuously until you have incorporated it all and you have obtained a fine cream. Put it in the fridge.
After the dough is baked, take it out of the oven and let it cool completely.
After it has cooled, cut it into two equal slices.
Take the cream out of the refrigerator and mix again for about 1 minute.
Add the cream on top of one of the dough slices. Put the other slice on top and put the rest of the cream on the sides and on top.
Refrigerate for a few hours and then serve.
