Curry cu edamame si cartof dulce (Vegan), servit cu chiftelute de vita pe tigaie – Curry with edamame and sweet potato (Vegan), served with pan-fried beef meatballs

Reteta rapida de curry vegan delicios, pe care eu am alaturat-o unor chifteliute de vita perpelite in tigaie in fooooarte putin ulei.

Ingrediente: (pentru 4 portii)

Pentru curry:

  • 5 cartofi dulci medii
  • 500 g broccoli
  • 400 g edamame (eu am avut congelate – puteti folosi si mazare daca va place mai mult)
  • 600 ml lapte de cocos
  • 2 morcovi mari
  • 100-120 g pasta curry (eu am avut curry rosu)
  • 30 ml ulei de masline
  • patrunjel proaspat
  • sare + piper

Pentru chiftelute:

  • 500-600 g carne de vita tocata
  • 2 oua
  • marar proaspat
  • 2 cepe medii
  • 3-4 catei de usturoi
  • sare + piper
  • 30 ml ulei de masline

Preparare:

Intai pregatim amestecul pentru chiftelute.

Curatam morcovii si ii dam pe razatoare. Taiem ceapa marunt. Curatam si zdrobim usturoiul. Taiem mararul marunt. Amestecam totul intr-un bol impreuna cu ouale si putina sare + piper.

Lasam de-oparte.

Trecem la pregatirea curry-ului: curatam cartofii de coaja, ii taiem in felii de ~1 cm grosime, iar feliile le taiem in doua. Spalam brocolli si il taiem buchetele.

Intr-o tigaie punem ulei de masline, adaugam cartofii si ii rumenim cam 3-4 minute pana cand incep sa prinda culoare.

Cand cartofii incep sa se rumeneasca, adaugam broccoli si edamamele si gatim impreuna pentru ~2 minute. Adaugam apoi laptele de cocos si pasta de curry.

Amestecam bine, punem capacul si lasam sa se gateasca cam 15 minute amestecand periodic. Spre final dam capacul la o parte si lasam sa se gateasac fara. Adaugam tot atunci putina sare si piper. Cand legumele sunt fierte bine si sosul a mai scazut si a devenit mai gros oprim focul.

Cat timp se fierbe curry, perpelim chiftelutele intr-o tigaie.

Din amestecul pregatit mai devreme formam bilute de marime medie. Intr-o tigaie antiaderenta adaugam putin ulei si punem chiftelutele in tigaie. Le rumenim pe toate partile pana cand sunt bine gatite.

Presaram patrunjel proaspat tocat peste curry si servim impreuna cu cateva chiftelute de vita.

Delicios si rapid de facut.

Quick recipe for a delicious vegan curry, served alongside beef meatballs fried in a pan using just a little oil.

You can choose to make this exact combination or eat them separately, basically you have 2 delicious recipes in one ☺️

Ingredients: (for 4 servings)

For the curry:

  • 5 medium sweet potatoes
  • 500 g broccoli
  • 400 g edamame (I had frozen – you can also use peas if you prefer)
  • 600 ml coconut milk
  • 2 large carrots
  • 100-120 g curry paste (I had red curry paste)
  • 30 ml olive oil
  • fresh parsley
  • salt + pepper

For the meatballs:

  • 500-600 g minced beef
  • 2 eggs
  • fresh dill
  • 2 medium onions
  • 3-4 cloves of garlic
  • salt + pepper
  • 30 ml olive oil

Preparation:

First we prepare the meatballs mixture.

Peel off the carrots and grate them. Chop the onion finely. Peel off and crush the garlic. Finely chop the dill. Mix everything in a bowl together with eggs and a little salt + pepper.

Leave it aside.

Let’s move on to preparing the curry: peel the potatoes, cut them into ~1 cm thick slices, and cut the slices in half. Wash the broccoli and cut the florets as equal as you can.

Put olive oil in a pan, add the sweet potatoes and cook them for about 3-4 minutes until they start to brown a little.

When the potatoes start to brown, add the broccoli and edamame and cook together for ~2 minutes. Then add the coconut milk and the curry paste.

Mix well, put the lid on and let it cook for about 15 minutes, stirring periodically. Towards the end, put the lid aside and let the curry cook without it. Add a little salt and pepper. When the vegetables are cooked well and the sauce has reduced and become thicker, turn off the heat.

While the curry is boiling, cook the meatballs in a pan.

Form medium-sized balls. In a non-stick pan, add a little oil and put the meatballs in the pan. Brown them on all sides until they are well cooked.

Sprinkle fresh chopped parsley over the curry and serve with some beef meatballs.
