Am gatit acest somon pentru un pranz rapid, folosindu-ma de doar cateva ingrediente, am obtinut o masa super gustoasa si satioasa.
Ingrediente: (pentru ~4 portii)
- ~600 g somon
- ~300 g sparanghel (eu am avut congelat)
- ~200 g rosii cherry
- o lamaie
- 4-5 catei de usturoi
- cateva fire de patrunjel proaspat
- 40 ml ulei de masline
- 2-3 fire de rozmarin proaspat
- 3 fire de ceapa verde
- 100 g unt
- sare + piper

Preparare:
Spalam pestele si il tapetam cu niste servete de bucatarie ca sa absorbim surplusul de apa.
Curatam usturoiul si il dam prin presa. Taiem patrunjelul marunt.
Spalam rosiile si le taiem pe din doua. Taiem lamaia in doua.
Topim untul la microunde pentru ~1 minut. Il amestecam cu patrunjelul tocat, usturoiul zdrobit, zeama de la jumatate de lamaie plus sare si pieper.

Intr-un bol punem sparanghelul, 20 ml ulei, sare + piper si amestecam bine.
Procedam la fel cu rosiile, folosind restul de 20 ml de ulei, sare si piper.

Pregatim o tava cu hartie de copt si adaugam in lateralele tavii sparanghelul impartit egal. In mijloc punem ramurelele de rozmarin si deasupra asezam pestele.

Folosind o pensula de patiserie, ungem cu untul pregatit mai devreme, atat sparanghelul cat si pestele.
Adaugam deasupra fiecarei bucati de peste cate o feliuta de lamaie taiata din jumatatea de lamaie ramasa. Adaugam si rosiile. Presaram si un pic de piper.

Dam la cuptorul preincalzit la 200 de grade, pentru 25-30 minute, in functie de cuptor. Nu lasati mai mult de 30 de minute pentru ca riscati sa uscati pestele. Cand s-a rumenit frumos, scoatem tava din cuptor si oprim cuptorul. Presaram deasupra ceapa verde taiata marunt si servim.

I cooked this salmon for a quick lunch, using only a few ingredients and the result was a super tasty meal.
Ingredients: (for ~4 servings)
- ~600 g salmon
- ~300 g asparagus (I had frozen)
- ~200 g cherry tomatoes
- a lemon
- 4-5 cloves of garlic
- a few sprigs of fresh parsley
- 40 ml of olive oil
- 2-3 sprigs of fresh rosemary
- 3 spring onions
- 100 g of butter
- salt + pepper
Preparation:
Wash the fish and use paper kitchen napkins to absorb the water surplus.
Peel the garlic and smash it through the garlic press. Chop the parsley.
Wash the tomatoes and cut them in half. Also cut the lemon in half.
Melt the butter in the microwave for ~1 minute. Mix it with the chopped parsley, crushed garlic, juice from half a lemon plus salt and pepper.
Put the asparagus, 20 ml of oil, salt + pepper in a bowl and mix well. Do the same with the tomatoes, using the remaining 20 ml of oil, salt and pepper.
Prepare a tray with baking paper and add the evenly divided asparagus to the sides of the tray. Put the rosemary sprigs in the middle and place the fish on top.
Using a pastry brush, brush both the asparagus and the fish with the butter that you prepared earlier.
Add a slice of lemon on top of each piece of fish, use the remaining half of lemon that you have. Add the tomatoes and sprinkle a little pepper on top of everything.
Put the tray in the preheated oven at 200 degrees, for 25-30 minutes, depending on the oven.
Do not leave more than 30 minutes because you might end up with a fish that’s dry.
When it has browned nicely, remove the tray from the oven. Sprinkle finely chopped spring onions on top and serve.
