Nu stiu despre voi, dar eu iubesc ciupercile. As manca in fiecare zi 🙂 . Asa ca nu ratez nicio ocazie sa gatesc ceva care contine ciuperci.
Pentru ca vremea e inca capricioasa si primavara pare ca se lasa asteptata, m-am gandit ca merge de minune o supa. O supa cu muuuuulte ciuperci.
Ingrediente: (~pentru 6 portii)
- 700 g ciuperci (eu am folosit champignon brune – voi puteti folosi ce ciuperci va plac sau un mix de ciuperci)
- 2 cepe mari
- 4 catei de usturoi
- 5-6 morcovi medii
- 60 g unt
- cateva tije de apio
- o legatura de patrunjel
- 1-2 fire de rozmarin proaspat
- cateva fire de cimbru proaspat
- 3 cuburi de concentrat de supa
- 400 ml smantana de gatit (lichida)
- 1,5 l de apa
- sare + piper

Preparare:
Spalam si taiem legumele, dupa cum urmeaza: ciupercile felii egale, morcovii ii curatam de coaja si ii taiem felii, usturoiul la fel, ceapa se curata si se taie cuburi grosiere si apio se taie felii egale.

Intr-o oala incapatoare punem untul si cand acesta s-a topit, adaugam ceapa si usturoiul. Le gatim 2-3 minute la foc mediu pana cand ceapa este inmuiata. Adaugam rozmarinul si cimbrul, amestecam si mai lasam 1 minut. Adaugam ciupercile, morcovii si apio si amestecam bine. Punem capacul si lasam sa se gateasca ~5 minute, amestecand periodic.

Adaugam apoi apa, smantana si cuburile de supa, amestecam bine si punem capacul. Lasam sa fiarba cu capacul pus pentru ~20-22 minute, amestecand din cand in cand. La final adaugam patrunjelul tocat marunt si piper. Sare adaugam doar daca mai e nevoie.

A soup with lots of mushrooms.
Ingredients: (~for 6 servings)
- 700 g mushrooms (I used brown champignons – you can use any mushrooms you like or a mix of mushrooms)
- 2 large onions
- 4 cloves of garlic
- 5-6 medium carrots
- 60 g butter
- a few stalks of celery
- a bunch of parsley
- 1-2 sprigs of fresh rosemary
- a few sprigs of fresh thyme
- 3 cubes of soup concentrate
- 400 ml cooking cream (liquid)
- 1.5 l of water
- salt + pepper
Preparation:
Wash and cut the vegetables: cut the mushrooms into equal slices, peel the carrots and cut them into slices, peel the garlic and cut it into slices, peel the onion and cut it into thick cubes and the celery into equal slices.
Put the butter in a large pot and when it has melted, add the onions and garlic. Cook them for 2-3 minutes on medium heat until the onion has softened. Add the rosemary and thyme, mix, and cook for 1 minute. Add the mushrooms, carrots, and celery and mix well. Put the lid on and let it cook for ~5 minutes, stirring periodically.
Then add water, cream, and soup cubes, mix well, and put the lid on. Let it boil with the lid on for ~20-22 minutes, stirring from time to time. In the end, add finely chopped parsley and pepper. Add salt only if needed.
