Cous-cous cu curry verde de vinete si naut -Vegan / Couscous with eggplant, chickpea & green curry – Vegan

Sanatos, gustos, usor de facut, il puteti manca ca atare in varianta vegana sau alaturi de 1-2 oua ochiuri. Acest cous-cous cu curry verde si legume este ideal pentru pranz sau cina.

Ingrediente: (pentru 4 portii)

  • 3-4 vinete
  • 3 cepe medii
  • o capatana de usturoi
  • 500 g naut din conserva
  • 2 conserve de rosii cuburi ( 400 g x 2)
  • coriandru proaspat
  • 100 g pasta curry verde (sau curry rosu daca preferati)
  • 40 ml ulei de masline
  • sare + piper
  • o lingura pudra curry
  • o cana de cous-cous
  • 2 avocado pentru servire (cate jumatate pentru fiecare portie)

Preparare:

Cous-cous-ul se fierbe conform instructiunilor, se scurge si se lasa deoparte.

Vinetele se spala si se taie cuburi (in 4 felii pe lung, apoi feliile in fasii si fasiile in cuburi). Ceapa se curata, se taie in 2 pe lung si apoi felii egale. Usturoiul se curata si se taie felii. Coriandrul se spala si se toaca. Nautul se scurge din conserva, se clateste sub jet de apa si se scurge bine.

Intr-un wok incapator se pune uleiul si cand acesta s-a incins se adauga ceapa care se caleste cateva minute pana cand incepe sa se inmoaie. Se adauga apoi usturoiul si se amesteca bine. Se calesc impreuna pret de 1-2 minute dupa care se adauga vinetele, se amesteca bine si se lasa sa se gateasca impreuna 2-3 minute pana cand vinetele incep sa se inmoaie.

Adaugam apoi pasta de curry si lingura de curry si amestecam bine. Lasam sa se gateasca cam un minut dupa care adaugam rosiile, amestecam bine si dupa inca un minut adaugam nautul. Amestecam totul bine, punem sare si piper, acoperim cu un capac si lasam sa se gateasca la foc mediu pentru aproximativ 10-15 minute, amestecand periodic.

La final presaram deasupra coriandru proaspat tocat si servim alaturi de cous-cous-ul fiert si avocado taiat si asezonat cu putina sare si piper.

You can eat it in the vegan version or with 1-2 poached eggs.

This couscous with green curry and vegetables is ideal for lunch or dinner.

Ingredients: (for 4 servings)

  • 3-4 eggplants
  • 3 medium onions
  • 1 garlic
  • 500 g canned chickpeas
  • 2 cans diced tomatoes (400 g x 2)
  • fresh coriander
  • 100 g green curry paste (or red curry if you prefer)
  • 40 ml olive oil
  • salt + pepper
  • a spoonful of curry powder
  • a cup couscous
  • 2 avocados for serving (half for each portion)

Preparation:

Cook the couscous according to the instructions, drain and set aside.

Wash the eggplant and cut it into cubes (into 4 slices lengthwise, then the slices into strips and the strips into cubes). Clean the onion, cut it in half lengthwise, and then into equal slices. Peel the garlic and cut it into slices. Wash and chop the coriander. Drain the chickpeas from the can, rinse under running water, and drain well.

Add the oil to a large wok and when it is hot, add the onion, which is sauteed for a few minutes until it starts to soften. Then add the garlic and mix well. Saute together for 1-2 minutes, then add the eggplant, mix well, and let it cook for 2-3 minutes until the eggplant softens.

Add the curry paste and the curry spice and mix well. Let it cook for about a minute, then add the tomatoes, mix well and after another minute add the chickpeas. Mix everything together, add salt and pepper, cover with a lid, and let it cook on medium heat for about 10-15 minutes, stirring periodically.

In the end, sprinkle freshly chopped coriander on top and serve with boiled couscous, sliced avocado, and seasoned with a little salt and pepper.
