Prajitura cu blat cu mac&cocos si crema de vanilie – Cake with coconut, poppy seeds and vanilla cream

O delicioasa prajitura, care desi o sa va para la prima vedere complicat de facut, va promit ca pas-cu-pas, o sa realizati ca e de fapt usor de preparat.

Ingrediente: (pentru o tava de 26 cm diametru)

Pentru aluat:

  • 8 albusuri
  • 150 g zahar
  • 80 g seminte de mac
  • 100 g fulgi nuca de cocos
  • 3 linguri cu varf de faina
  • un praf de sare
  • 15 g praf de copt
  • o esenta de vanilie

Pentru crema:

  • 8 galbenusuri
  • 100 g zahar
  • 40 g amidon de porumb
  • 400 ml lapte
  • 200 g unt
  • o esenta vanilie

Pentru topping:

  • 250 g ciocolata neagra
  • o esenta rom
  • 4 linguri zahar
  • 100 ml smantana lichida
  • cativa biscuiti simpli
  • o cana mica de lapte cald

Preparare:

Se separa albusurile de galbenusuri. Albusurile se pun intr-un bol impreuna cu sarea si cele 150 de grame de zahar pentru aluat si se mixeaza bine pana cand obtinem o spuma consistenta care nu curge de pe paletele mixerului. Se adauga apoi macul si se mixeaza, dupa care se pune nuca de cocos si se continua mixarea. Se adauga apoi faina, esenta de vanilie si praful de copt si se mai mixeaza pana la amestecul complet al ingredientelor.

Se da drumul la cuptor la 180 de grade si se lasa sa incinga.

Se transfera aluatul intr-o tava cu fund detasabil. Se da la cuptorul preincalzit pentru ~30 de minute sau pana cand trece testul scobitorii. Se lasa la racit.

Cat timp se raceste blatul trecem la prepararea cremei.

Se mixeaza intr-un bol galbenusurile cu cele 100 g de zahar pana cand obtinem o spuma consistenta. Amidonul se amesteca cu cateva linguri de lapte si se omogenizeaza bine. Restul de lapte se transfera intr-o oala impreuna cu esenta de vanilie si se pune la fiert la foc mic. Se amesteca amidonul diluat cu galbenusurile batute cu zaharul si se mixeaza un pic. Cand laptele incepe sa fiarba se adauga amestecul de galbenusuri, zahar si amidon peste lapte si cu ajutorul unui tel se amesteca in continuu in oala pana cand crema incepe sa se ingroase.

Amestecam bine pana cand crema incepe sa aiba consistenta unei budinci. Oprim focul si adaugam untul taiat cubulete, amestecand cu telul pana cand untul este complet topit si incorporat in crema. Se adauga crema peste blatul racit si se intinde uniform cu ajutorul unei spatule.

Intr-un bol, punem cana de lapte necesara pentru topping si il incalzim un pic la microunde. Inmuiem pe rand biscuitii cateva secunde in laptele cald si apoi ii punem deasupra cremei. Preocedam astfel pana cand am acoperit toata suprafata prajiturii. Lasam deoparte.

Intr-o oala cu fund gros, la foc mediu, punem la topit ciocolata, impreuna cu smantana lichida, zaharul si cu esenta de rom. Amestecam continuu pana cand ciocolata este topita. Nu gatiti prea mult, cand ciocolata este topita luati de pe foc. Sa adauga ciocolata topita peste prajitura si se lasa la racit pentru 2-3 ore.

Se serveste rece.

A delicious cake, and although at first glance it will seem complicated to prepare, I promise you step-by-step, you will realize that it is actually easy to prepare.

Ingredients: (for a 26 cm diameter pan)

For the dough:

  • 8 egg whites
  • 150 g sugar
  • 80 g poppy seeds
  • 100 g coconut flakes
  • 3 tablespoons of flour
  • a pinch of salt
  • 15 g baking powder
  • a vanilla essence

For the cream:

  • 8 egg yolks
  • 100 g sugar
  • 40 g corn starch
  • 400 ml milk
  • 200 g butter
  • a vanilla essence

For the topping:

  • 250 g dark chocolate
  • rum essence
  • 4 spoons sugar
  • 100 ml of liquid cream
  • some simple biscuits
  • a small cup of warm milk

Preparation:

Separate the whites from the yolks. Put the egg whites in a bowl together with the salt and 150 grams of sugar and mix well until you get a consistent foam. Then add the poppy seeds and mix, and after that add the coconut flakes and continue mixing. Add the flour, vanilla essence and baking powder and mix again until all the ingredients are completely mixed together.

Turn on the oven at 180 degrees and let it heat up.

Transfer the dough to a pan with a removable bottom. Place in the preheated oven for ~30 minutes or until it passes the toothpick test. Leave it to cool down.

While the dough is cooling, prepare the cream.

Mix the egg yolks with 100 g of sugar in a bowl until a consistent foam is obtained. Mix starch and with some spoons of milk and homogenize it well. Transfere the rest of the milk to a pot, together with the vanilla essence and put to boil on low heat. Mix the diluted starch with the egg yolksyou mixed earlier with sugar, and blend everything together . When the milk starts to boil, add the mixture of egg yolks, sugar and starch over it and with the help of a whisk stir continuously until the cream starts to thicken.

Mix well until the cream starts to have the consistency of a pudding. Turn off the heat and add the butter, mixing with a whisk until the butter is completely melted and incorporated into the cream. Add the cream over the cooled dough and spread it evenly with the help of a spatula.

In a bowl, put the milk for the topping and heat it a little in the microwave. Dip the biscuits in the warm milk one by one, then place them on top of the cream. Do this until you covered the entire surface of the cake. Leave it aside.

In a thick-bottomed pot, over medium heat, melt the chocolate, together with the liquid cream, the sugar and the rum essence. Stir continuously until the chocolate is melted. Do not cook too much, when the chocolate is melted take it off of the heat. Add the melted chocolate over the cake and let it cool for 2-3 hours.

Serve it cold.
