Oliebollen – gogosi olandeze cu stafide – Oliebollen – Dutch donuts with raisins

Simple de facut, in spiritul caracteristic de ne-complicare al bucatariei olandeze, gustoase si aromate, oliebollen sunt o specialitate de gogosi olandeze care au in ele stafide sau bucatele de mar (dar nu e obligatoriu, exista si varianta simpla) si care se consuma la masa de Revelion dar care pot fi gasite in oras pe la diverse tonete, in toata perioada lunii Decembrie si care umplu strazile cu mirosul lor dulce-vanilat. Se servesc pudrate din belsug cu zahar pudra.

Sunt minunate calde, dar si reci, merg incalzite la microunde si sunt fresh cam 3 zile.

De asemenea puteti sa le congelati si sa le incalziti la cuptor cateva minute inainte de servire, dupa decongelare.

Ingrediente: (Pentru aproximativ 20 de bucati)

  • 500 ml lapte cald
  • 500 g faina
  • 200 g stafide
  • o esenta rom
  • o esenta vanilie
  • coaja rasa de la o lamaie
  • 5 linguri cu varf de zahar
  • 7 g drojdie uscata
  • un ou
  • putina sare
  • ~ 1 l ulei de floarea soarelui pentru prajit
  • zahar pudra vanilat (sau simplu) pentru servire

Preparare:

Stafidele se spala bine si se pun intr-un bol cu apa fierbinte impreuna cu esenta de rom. Se lasa la inmuiat. Laptele cald se amesteca bine cu drojdia si cu zaharul si se lasa cam 15 minute.

Intr-un vas se pune faina impreuna cu sarea si se amesteca bine. Se adauga amestecul de lapte si drojdie si se amesteca bine cu ajutorul unei linguri de lemn. Se adauga apoi stafidele scurse bine, coaja de lamaie si esenta de vanilie, se amesteca bine – vom obtine un aluat lipicios si elastic. Se acopera vasul cu o folie si se lasa la loc caldut cam o ora jumatate-doua ore pana cand aluatul si-a dublat volumul.

Se pregateste o oala sau un tuci sau o tigaie mai adanca si se pune uleiul la incins (cam un litru). Cu ajutorul unei linguri se ia si se pune aluat in oala si se prajesc gogoselele pana cand sunt rumene. Se scot cu ajutorul unei palete cu gauri si se transfera pe un platou tapetat cu servete de hartie pentru absorbtia surplusului de ulei. Procedam astfel pana cand epuizam aluatul.

Se transfera pe un platou si se pudreaza din belsug cu zahar.

Simple to prepare, in the characteristic uncomplicated spirit of Dutch cuisine, tasty and aromatic, oliebollen are a speciality of Dutch doughnuts that have raisins or pieces of apple in them (but it is not mandatory, there is also a simple version).

The tradition is to eat them at the New Year’s Eve dinner, but you can find them all around the city during the whole month of December. The streets are filled with their sweet vanilla smell and it’s simply wonderful.

They are super tasty while warm, but they are also good cold, and if you heat them in the microwave for 40 seconds they will be super good. They stay fresh for about 3 days

You can also freeze them and heat them in the oven a few minutes before serving, after defrosting.

Ingredients: (For about 20 pieces)

  • 500 ml warm milk
  • 500 g flour
  • 200 g raisins
  • 1 rum essence
  • 1 vanilla essence
  • grated peel from a lemon
  • 5 tablespoons of sugar
  • 7 g dry yeast
  • one egg
  • a little salt
  • ~ 1 l of sunflower oil for frying
  • powdered vanilla (or plain) sugar for serving

Preparation:

Wash the raisins well and put them in a bowl of hot water together with the rum essence. Let them soak. Mix well the warm milk with the yeast and sugar and leave it aside for about 15 minutes.
Put the flour together with the salt in a bowl and mix well. Add the milk & yeast mixture and mix well with a wooden spoon. Then add the well-drained raisins, the lemon peel and vanilla essence and mix well – you will get a sticky and elastic dough. Cover the bowl with a foil and leave it in a warm place for about 1.5-2 hours or until the dough has doubled it’s volume.
Prepare a deep pan and heat the oil (about 1 liter). With the help of a spoon, take some dough and put it in the pot and fry the donuts until they are brown. Remove them with the help of a spatula with holes and transfer them to a plate lined with paper napkins to absorb the excess oil. Proceed in this way until you finish the dough.
Transfer them to a plate and sprinkle with sugar.
